Cheesecake is a very popular cake in my house and is usually the cake of choice when it comes to special occasions. Although, any type of cheesecake will be met with bright eyes and salivating humans, there is one particular type that does not last 2 days in this house and that is, New York Baked.

After a few experiments we've developed one recipe that brings together the fluffiness of that NY style and my husbands 'pinickety' dietary requirements.
